Due to how many words sound so alike in Chinese, and the Chinese’s love for auspiciousness and having a more or less superstitious culture (at the very least, historically, but even among the older generations now), there are many auspicious meanings behind things that we do and eat during Lunar New Year, which is a huge thing.
Even as a Chinese, as I am an Australian-born Chinese, the Chinese Lunar New Year culture I’m exposed to is limited to what I do in my family, and may not be as traditional as some others, and my knowledge of the auspicious meanings is also limited due to lower exposure of Chinese words, history, culture etc. So I had to do a bit of research on the website, Baidu, and read through some Chinese websites to get the most accurate information. The following information comes from Baidu research.
Also, I only speak for the Chinese, and other cultures like Japanese, Vietnamese etc. may celebrate Lunar New Year with different food. I am not familiar with that. This is a very general info dump on food eaten by the Chinese during Lunar New Year (which is not just a one-day celebration, btw, but around 15 days, with certain days standing out).
